Bacon Cheddar Cheeseburger with Home Made Cajun Onion Rings

This is a nice "take out style" meal that you can make at home for pennies on the dollar, and my oh my, the flavor is so much better when you do it yourself! 🙂

Equipment

Ingredients

  • 1 large Onion
  • 1.5 pounds Ground Beef
  • 8 slices Bacon (figure 2 for each burger)
  • 4 slices Cheddar, American or Colby Jack Cheese
  • 4 slices Tomato (for topping on burger)
  • 4 slices Onion (for topping on burger)
  • 1/2 cup Bread Crumbs
  • 1/2 cup Flour
  • 1/2 tbsp Baking Powder
  • 1/2 cup Milk
  • 2 teaspoons Tony Cachere's Cajun Seasoning Mix
  • 1/2 teaspoon Salt
  • 1 Egg

Instructions

For Hamburgers

  • Divide the 1.5 pounds of ground beef into four equal parts (I ended up with a test patty ..LOL)
  • Form each section into a round hamburger patty
  • Place on Baking Sheet
  • Season each patty with a sprinkle of salt, pepper and seasoning salt (simpler the better)
  • If you have a cast iron grill top make sure that you have it on the grill and heating up. You want the grill pan to be hot so when your burger touches it you will get a good sear. If you don't have a grill pan, you can use aluminum foil. Make sure to spray foil with Pam or some type of cooking spray. The aluminum foil just insures that your burger doesn't fall through and the cooking spray prevents it from sticking to the foil. .
    NOTE: MAKE SURE TO PUT THE FOIL ON BEFORE YOU FIRE UP THE GRILL!
  • Place your seasoned burgers on the grill and cook on each side for approximately 2.5 minutes. If you prefer more "well done" burgers, keep them on for 3.5 minutes.
  • Once you flip onto the final side, make sure to place your selection of cheese on the burgers and leave the others plain. I know, can you believe that some people do not like cheese on their burgers?
  • Extra Hint: You can use untoasted buns for your burgers. However, if you want to add that extra special flavor, butter the inside of the buns and place butter side down on the grill for a minute or two. You just want to get a nice golden color on the buns. Place them on a baking sheet and separate top from bottoms.
  • When your burgers are ready, carefully remove them from the grill and place on top of the buns. If you have cheeseburgers, you may want to leave the top of the bun off so folks can dress them the way the want without the bun getting stuck. 🙂

Onion Rings

  • Chop your large onion into approximately 1/4 inch strips. Carefully push onions down to loosen the rings and place aside. Any leftover onion pieces you can save in a plastic baggie and use for other recipes that call for onions. You can also thinly slice and add as a topping to your burgers!
  • In a small container, bowl or on a baking sheet, combine 1/2 cup of flour, 1/2 tbsp of baking powder and 1/2 teaspoon of salt by gently whisking together. Sprinkle 2 teaspoons of Tony Cachere's Cajun Seasoning and gently combine into the mixture.
  • Place your onion rings into the mixture and thoroughly coat them. Take them out and set aside. Save that flour mixture as you will need it for the next step.
  • To your flour mix, add 1/2 cup of milk, and 1 egg and mix to create your batter. Your batter should be smooth, similar to the consistency of a pancake batter.
  • In a dutch oven, deep frying pan or deep fryer, warm your oil to 350 degrees.
  • Take your well floured onion rings and dip them into the batter to fully coat them.
  • Dip the battered onion into the bread crumbs and thoroughly coat. Knock the excess bread crumbs off and carefully put into the heated oil until they are golden brown.
  • Drain a paper towel and serve with your burgers!

To Assemble

  • Please dress your burgers as you like. I do mine as follows:
    Burger on the bottom bun
    Tomato on top of the cheese
    Onion on top of the tomato
    Lettuce on top of the onion
    Bacon on top of the lettuce
    I prefer Mayonnaise on my burger (it's a northern thing) but feel free to use whatever condiments you prefer! 🙂
