This is one of those classic slavic comfort dishes to make on a nice, cool, fall day or frigid winter days up north. The bell peppers give it that warm comfort and the white rice just gives you the hug that you need. It’s packed full of flavor so I hope you enjoy this one. Best of all, it’s really easy to make!

Ingredients

  • 1 pound kielbasa (Your preferred brand) (or in the Southern US, you can used "smoked sausage") I used "Schmalz" brand kielbasy
  • 1 large red bell pepper, seeded
  • 1 large green bell pepper, seeded
  • 1 medium onion
  • 2 cloves or 1 tablespoon garlic (minced)
  • 1/2 teaspoon "Vegeta" seasoning (you can substitute with chicken bouillon)
  • 3 cups water
  • 2 cups white rice (cook to instructions on the package)

Instructions

  • Dice your red and green bell peppers into about 1/2 inch squares (or as close to a square as you can get. 🙂 Add about two tablespoons of oil (could be olive or vegetable) to your soup pot and add the peppers on low to medium heat to start sauteeing.
  • Next, chop your onions and add to the pot.
  • Next, chop your kielbasa into bite sized pieces and add to the soup pot.
  • Sautee the peppers, onions and kielbasa for about 10 minutes until kielbasa starts to emit some juices and the peppers and onions soften a bit. Be careful not to burn or scorch.
  • After 10 minutes, add the three cups of water and the Vegeta or Chicken Bouillon and raise the heat to bring to a rolling simmer.
  • Cook for approximately 20 minutes and shut the heat off. While this is cooking I normally make my rice so it will be ready when the soup is.
  • Spoon some rice into a shallow bowl.
  • Add some of the soup over the rice and eat! This will warm you right up! Enjoy!
