Cabbage and Noodles (Káposztás tészta)

Grandma Insky's Cabbage and Noodles
This is "Hungarian Comfort Food" at it's best. Bacon Grease or Butter, Onions, Cabbage and Egg Noodles. Can't get much easier than that!

- Frying Pan
- Pot to boil noodles
- Knife
Ingredients
- 1 bag Egg Noodles
- 4 tbsp Butter (optional if not using bacon grease)
- 3 oz Bacon Grease (optional if not using butter)
- 1 medium or large Onion
- 1 medium or large head of Green Cabbage
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/2 cup Water
Instructions
- In a large frying pan, melt 4 tbsp of butter on medium heat or if using bacon grease, melt in frying pan.
- Chop your onion and add to the butter and start to sautee.
- Chop your cabbage into strips and add to the butter and onions.
- Fry the cabbage and onions until you begin to see a nice browning on both. You don't want to burn it but just see a nice browning on them.
- Once slightly browned, pour in 1/4 cup of water and cover with a lid for a few minutes. This will help soften the cabbage and onions slightly. Again, be careful to not burn these precious ingredients.
- Empty the Egg Noodles into a large pot and cook according to instructions. Once the Egg Noodles are done, drain them and put them back in the larger pot. Add the remaining 4 tablespoons of the butter and mix into the noodles.
- Take the frying pan with the cabbage and onions and pour that into the pot with the noodles. Stir well to combine all the ingredients. Add the salt and pepper and you are ready to serve. Enjoy this Hungarian comfort food for it's simplicity and taste! Added note: for a sweeter taste, add on tablespoon of sugar while sauteeing cabbage and onions.
