This is the easiest recipe! Take El Tapatio Frozen Burritos (or you can make your own) add some chili, cheese and bake! That’s it!!

Easy Burrito Casserole

This is what I call a very "semi-home made" meal You can elect to make your own beef and bean burritos by using taco seasoning, browning up some ground beef, warming some refried beans and using flour tortillas...or...you can just buy some El Monterrey Beef and Bean Burritos and save a bunch of time. The other key is this recipe definitely needs "Wolf Brand No Bean" Chili versus another brand. IF you can't find Wolf Brand then go ahead and use your favorite canned chili (unless of course you want to make your own favorite chili from scratch) 🙂

Ingredients

  • 1 pckg of 8 El Monterrey Beef and Bean Frozen Burritos
  • 1 can Wolf Brand Chili (No Beans)
  • 1 block Colby Cheese (or you can buy already grated)

Instructions

  • Spray your casserole dish with nonstick cooking spray (for easy clean up). 🙂
  • Open the pack of El Monterrey Burritos and place them in the casserole dish in one single layer if possible
  • Open the can of chili and spread over the top of all the burritos, trying not to leave any of them uncovered.
  • Grate 1/2 of the block of Colby Cheese and spread half of that over the burritos. Save the other half of your grated cheese to add later.
  • Cover the dish and put in the oven to bake for 45 minutes.
  • After about 30 minutes of cooking, take the casserole out and put the rest of the cheese onto burritos and cook for another 15 minutes.
