Are you trying to watch your red meat intake? Are you trying to become more “plant-based” in your diet? This is a great alternative recipe to the traditional “Sloppy Joe!” We substituted and updated this recipe so it can be made simply and quickly by incorporating your “insta-pot” pressure cooker. Best of all, it’s gluten-free too! I know…you are thinking..”How could this taste anything like a sloppy joe?” Well, surprisingly it has the flavor for sure. The lentils give it a satisfying richness for not having the meat so I really didn’t miss it at all. We served ours up over hamburger buns, open-faced like we have all of our lives with a side of tater tots.

Insta-pot Sloppy Joe Lentils
Equipment
- Instant Pot
- Knives for chopping vegetables
- Spatula
- Ladle for serving
Ingredients
- 1 medium yellow or white onion diced
- 1/2 green or red bell pepper diced
- 3/4 cup diced carrots
- 3 cups water
- 1 15oz can Hunt's Manwich (per ConAgra this is Gluten Free)
- 1 pound bag of green or brown lentils
For Serving Sloppy Joes
- 1 package hamburger buns
- optional your choice of pickles
- optional extra ketchup
- optional extra mustard
Instructions
- Turn your Insta-pot to the Sautee setting.
- Spray with nonstick spray or use two tablespoons of olive or vegetable oil to prevent sticking.
- Add your carrots and bell pepper and begin sauteeing. Mix around for about 1 minute.
- Add your diced onion and continue cooking the vegetables for about 4 more minutes stirring consistently.
- Turn the insta-pot off.
- Add the lentils
- Add the Hunts Manwich Mix, water and stir everything to combine the ingredients.
- Put the lid on the insta-pot an make sure the steam release is set to "sealing"
- Cook on MANUAL, HIGH HEAT for 13 minutes**NOTE** - cooking time is actually longer than 13 minutes because the insta-pot needs to heat up and come to pressure. Once it has reached the pressure cook cycle, it will start counting down.
- Once the insta-pot counts down to zero let it naturally release it's pressure for 6 minutes. Once it counts back up to 6 minutes, manually release the pressure valve and let it completely depressurize.
- Open up the Insta-pot, get the buns and condiments, and serve! It's really that faset and easy!
