Steak Salad
This is a great "leftover" recipe. Today for lunch we salvaged some things out of the refrigerator. We had NY Strips a couple of nights ago and some romaine hearts, tomatoes and cucumbers. Throw in a couple of hard boiled eggs and "voila" instant Steak Salad! You can do this with chicken, turkey, pork, ham, etc.! Plus, it helps empty out the fridge for the new groceries that you will be getting. 🙂

- Salad bowl
- Knife
- Pot
Ingredients
- 4 eggs to hardboil
- 1 heart of romaine or head of iceberg
- 2 roma, vine ripe or beef steak tomatoes
- 1 cucumber
- whatever else you think would be good in a salad
Instructions
- Make your hard boiled eggs. Put four eggs into a small sauce pan and fill the pan so that the eggs are totally submerged. Add two capfuls of white vinegar to your water.
- Turn on heat and bring eggs just to a rolling boil for 5 minutes. Turn off the heat and let the eggs sit in the water for 15 minutes. After 15 minutes, empty the warm water and let run cold water into the pan. Let those sit while you are making the salad.
- Chop your lettuce into bite-sized pieces and add that to your salad bowl.
- Slice your cucumbers and add to the salad.
- Slice your tomatoes and add to the salad.
- In the interim, take your steak, turkey, chicken, pork, ham, etc. and dice it into bite-sized pieces. Microwave them for about 1 minute to warm them up.
- Peel your eggs and cut them length-wise. Add those into your salad.
- Add the cubed meat on top of the salad toss in your favorite salad dressing and serve! Enjoy!

This was a very easy recipe. We will definitely keep making this one.
We make this all the time with whatever leftover protein we have. I’ve used salmon, chicken, steak, tuna. You’ll have to share some of your salad dressing recipes on your blog 😊
