Diabetic and Kidney Friendly Potatoes

Equipment

  • Chopping Board
  • Boiling pot with strainer
  • Knife

Ingredients

  • 4 medium potatoes
  • 4 tbsp unsalted butter
  • Lots of water

Instructions

  • Fill boiling pan with a good a mount of cold water
  • Peel your potatoes
  • Cut your potatoes into cubes and put them into the water
  • Let the potatoes soak for 20 minutes. You will see the water turn cloudy.
  • Empty the water from the pot but using the strainer, then refill the pot with more cold water.
  • Let the potatoes soak for another twenty minutes.
  • Empty the water and then rinse the potatoes thoroughly.
  • Refill the pot and once the water reaches boiling point, boil the potatoes for 10 minutes
  • Empty the water and refill the pan again.
  • Bring water to the boiling point and boil for another 10 minutes or until potatoes are to your desired liking.
  • Drain the potatoes and add the 4 tablespoons of butter. If needed, lightly salt the potatoes but do not over do it! Enjoy!
