Really Easy Garlic Smashed Potatoes

Equipment

Ingredients

  • 2 pounds small white or red potatoes. (Can use Yukon Golds and just cut into halves) Leave peels on
  • 1/4 cup olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced (can substitute 1 teaspoon garlic powder)
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt (use more to your taste if desired)
  • 1/4 teaspoon pepper (use more to your taste if desired)

Instructions

Boiling the potatoes

  • Boil your potatoes in a pot of hot water for 20 minutes or until potatoes are reasonably soft.
  • After 20 minutes, drain your potatoes.

Roasting the potatoes

  • Preheat your oven to 400F.
  • Line a baking sheet with aluminum foil. (you can also just use the baking sheet as is)
  • Spray with non stick cooking spray
  • Transfer your potatoes to your baking sheet and gently smash each one with your spatula. You do not want to "pulverize" these potatoes. Just give them a gentle smash so they remain somewhat whole.
  • Once your potatoes are smashed, drizzle the olive oil over the potatoes.
  • Melt your butter (either in microwave or separate pan) and drizzle over the potatoes.
  • Drizzle the minced garlic (or garlic powder) over the potatoes.
  • Sprinkle the onion powder, pepper and salt over the potatoes.
  • Gently toss the potatoes to coat thoroughly.
  • Place baking sheet into the preheated 400F oven and cook for 15 minutes or until potatoes are slightly golden. Feel free to pull the potatoes out about 7 minutes in and gently toss again to promote even cooking.
  • Take your potatoes out of the oven and serve immediately. We like ours with a touch of ranch or sour cream but if you want to keep it light, they are just as good plan too!
