Preheat your oven to 400F.
Line a baking sheet with aluminum foil. (you can also just use the baking sheet as is)
Spray with non stick cooking spray
Transfer your potatoes to your baking sheet and gently smash each one with your spatula. You do not want to "pulverize" these potatoes. Just give them a gentle smash so they remain somewhat whole.
Once your potatoes are smashed, drizzle the olive oil over the potatoes.
Melt your butter (either in microwave or separate pan) and drizzle over the potatoes.
Drizzle the minced garlic (or garlic powder) over the potatoes.
Sprinkle the onion powder, pepper and salt over the potatoes.
Gently toss the potatoes to coat thoroughly.
Place baking sheet into the preheated 400F oven and cook for 15 minutes or until potatoes are slightly golden. Feel free to pull the potatoes out about 7 minutes in and gently toss again to promote even cooking.
Take your potatoes out of the oven and serve immediately. We like ours with a touch of ranch or sour cream but if you want to keep it light, they are just as good plan too!
