Simple Guacamole
This guacamole recipe is a "tomatoeless" version that I learned while travelling in Mexico. It's very simple and tasty. REMEMBER!! Guacamole should not be completely smooth. It should have some substance and chunkiness! :-)

- 4 ripe Avocados (gently squeeze). It should give a little. If avocado is solid, it's not ripe
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Chili Powder
- 1/2 teaspoon Salt
- 1 small Lime (to squeeze into Guacamole)
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Garlic Powder
- 1/2 cup Diced Tomoatoes (OPTIONAL)
Slice your Avocados in half length-wise
Take the pit out of the center
Repeat this for the other three avocados.
Scoop the meat from the avocados into the bowl
Cut your lime into two and squeeze one entire half onto the avocados
Add the chili powder, cumin, salt, onion powder and garlic powder.
Mash the avocados roughly with your fork. If your avocados are not ripe, this will not be easy and you may need to resort to using a potato masher. :-)
If you like tomatoes in your guacamole, add them here.
Taste the mixture and make sure you have enough salt and/or lime flavoring to your liking. Add more of each if you need to. Let this chill for a little while in the fridge if you wish. If you've made a taco salad or nachos, this would be a great accompaniment!
Enjoy with tortilla chips or on top of your taco salad or nachos!
