Preheat your waffle iron
In your mixing bowl, beat your eggs until fluffy with your whisk (or electric mixer). Add your flour, milk, vegetable oil, sugar, baking powder, salt and vanilla and whisk/mix until smooth.
When waffle iron is heated, spray with nonstick cooking spray and get ready to make some waffles!
I use a 1/3 cup scooper not quite filled to the top to add the batter to each side of the waffle maker.
Add batter to each side of the waffle maker and close it and wait.
Your light should be off. The waffle should cook anywhere from 1 to two minutes. Your Indicator light should turn green when it's ready to be checked.
Open your waffle maker and check to make sure your waffle is a nice golden brown. If you desire it to be a bit darker, go ahead and close it again and wait another 30 seconds or so and check again.
When you feel it's done to your liking, remove the waffles from the waffle maker and place on a baking sheet or plate.
Continue with a new batch of waffles and repeat until you have used all of your batter. I normally get about 20 waffles out of the batch of batter. These waffles freeze wonderfully and can be re-heated from the freezer by putting into your toaster as you would with any Eggo's or Aunt Jemima Waffles.
Add a pat of butter and some syrup and you are all set. Your famly will love you forever! :-)
