Suzy's famous chicken salad
This is a very simple chicken salad recipe. There are no nuts, fruits or any strange items in this salad. Simple chicken, mayo, green onions and celery are the key ingredients. Add a pinch of salt and pepper and "Voila" you are done!

- 2 Chicken Breasts (Boiled)
- 2 Stalks Celery (Chopped)
- 2 Stalks Green Onion (Chopped)
- 5 Tbsp Mayonnaise
- 2 Teaspoons Onion Powder
- 2 Teaspoons Garlic Powder
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
Cooking the chicken
In a stock pot, add your two chicken breasts, three cups of water, the salt, pepper, garlic powder and onion powder and bring to a boil. Cook chicken for about 20 minutes or until chicken is cooked through. Save your chicken broth for that is created for any future dishes you might be able to use it for.
Making the chicken salad
Chop the chicken and add to a mixing bowl
Chop the green onion and add to chicken
Chop the celery and add to the bowl
Add a pinch of salt
Add a pinch of pepper
Add 5 Tbsps of mayo ( I normally use Hellman's and not Miracle Whip) to bowl and mix well to combine.
Chill the chicken salad for 30 minutes or until ready to serve.
We normally buy store bought croissants for our chicken salad sandwiches! Enjoy
