Easy Fried Corn
This is a simple recipe to make corn. Three ingredients: Corn, Butter and Green Onions keep this side light. You can add some optional cream cheese if you wanted to make this a creamier dish. Add a pinch of salt and pepper and it's ready to serve. Use fresh corn off the cob, frozen corn or even canned corned that is drained. It comes out great either way!

- 1 pound corn (off the cob, frozen or canned If canned, drain thoroughly
- 4 tbsp butter, salted (1/2 of a stick)
- 3 stalks green onions/scallions
- OPTIONAL 1 whole bell pepper (Green or Red)
- pinch of salt
- pinch of pepper
If using ears of corn, cut the kernels off the cob and into the mixing bowl. Otherwise, pour your corn into a mixing bowl. Drain thoroughly if you are using canned corn. (DO NOT USE CREAMED CORN)
Chop your scallions finely (both white parts and green parts) and add to the bowl
Add a pinch of salt and a pinch of black pepper
In a frying pan, warm your butter until it's completely melted and starting to sizzle slightly. Keep your heat on "medium high."
Add everything that is in your mixing bowl into the butter and cook for about 5 minutes, stirring constantly to coat the corn thoroughly in the butter. A little browning is okay but if you notice it starting to burn, immediately move from heat. You are done. Enjoy!
