We are trying to keep a healthier diabetic and kidney free approach to some of our meals. This one, in particular, is regarding potatoes. Potatoes include a good amount of potassium (somewhere near 400mg). I’ve done some research and studying and learned that by peeling and soaking the potatoes twice prior to cooking and then boiling them twice during the cooking process cuts the potassium to about 1/2 of the normal amount of potassium (around 200mg). If you are diabetic and want to be friendly to your kidneys, try this potato recipe. Of course, sodium (salt) is also a major player in all the meals so make sure to limit the amount of salt to the lowest possible level. Let me know if you have any questions!
Diabetic and Kidney Friendly Potatoes
Equipment
- Chopping Board
- Boiling pot with strainer
- Knife
Ingredients
- 4 medium potatoes
- 4 tbsp unsalted butter
- Lots of water
Instructions
- Fill boiling pan with a good a mount of cold water
- Peel your potatoes
- Cut your potatoes into cubes and put them into the water
- Let the potatoes soak for 20 minutes. You will see the water turn cloudy.
- Empty the water from the pot but using the strainer, then refill the pot with more cold water.
- Let the potatoes soak for another twenty minutes.
- Empty the water and then rinse the potatoes thoroughly.
- Refill the pot and once the water reaches boiling point, boil the potatoes for 10 minutes
- Empty the water and refill the pan again.
- Bring water to the boiling point and boil for another 10 minutes or until potatoes are to your desired liking.
- Drain the potatoes and add the 4 tablespoons of butter. If needed, lightly salt the potatoes but do not over do it! Enjoy!
